Crispy Roasted Chicken Thighs

When you hear roast chicken, you typically think of a whole bird, stuffed with something and covered with extravagant seasonings and herbs! While I love a traditional whole-bird roasted chicken, I have a different preparation that is much more time efficient and is packed with flavor. Enter chicken thighs! I like to buy an 8 pack of chicken thighs so I can stretch this out for a couple meals. This has half the guilt of fried chicken with all of the flavor. I love how juicy the meat is and I’ll teach you how to get that perfect crispy skin that is to die for! Pair this chicken with some potatoes and some sautéed greens, and you’ve got yourself a delicious American classic!


Crispy Roasted Chicken Thighs

Prep time 5 mins

Cook time 40 mins

Serves 4 (or 2 BIG BOYS)


What you’re going to need:

4 6oz chicken thighs- bone in, skin on

2 Tbsp. olive oil

2 Tbsp. BBQ rub

1/2 Tbsp. Salt and pepper

1/2 Tbsp. Garlic powder

1 tsp. Rosemary


Start cooking!

Step 1 Line a baking sheet with Aluminum foil, keeping your cleanup to a minimum. Take each breast and cover with olive oil until coated. Preheat oven to 400°.

Step 2 Cover the chicken thighs with your seasonings. I use bbq rub because it has a blend of great spices and will create a nice crispy chicken skin. Add the salt and pepper and garlic powder until the thighs are very coated.

Step 3 Place the chicken thighs on the middle rack and let them roast for 40 minutes. I like to pull them out at 40 mins and then if the skin needs more crisp, I will put it on broil and closely monitor them for no more than 2 minutes.

Step 4 Let them stand for 3 minutes and enjoy!



Notes I can’t reiterate enough, it’s the seasonings that are going to give you that crispy skin! Don’t skimp, add more than you think it needs!

Also, depending on how thick the skin is, you may have some cooked down chicken fat/oil in your baking sheet, totally normal. It means you just made some delicious roasted chicken thighs!
